Tanjia Cuisine (Tan Family Cuisine) was created in the late Qing Dynasty (1644 - 1911), by the high-ranking civil servant Tan Zongjun. Since 1875, it successfully combines the flavor of several cuisines and developed its own characteristics, to create a style and taste like no others. Peng Changhai, the only direct student of Tan Zhuoqing, was invited to work at the Beijing Hotel to pass on the secret recipes to the next generation chef. Since 1958, the Beijing Hotel has continued to serve nearly 300 unique high quality dishes in their original way.
